Key Duties and Responsibilities:
Operational Management:?Strategically plan, organize, direct, control, and evaluate the overall operations of the restaurant, with a primary focus on pizza production, cooking, quality, and customer experience.
Develop and maintain supplier relationships and negotiate arrangements for high-quality food ingredients and other necessary materials to ensure optimal cost and quality.
Negotiate arrangements with customers for catering or special events.
Team Leadership: Lead and guide the team, ensuring that each member operates in a calm and efficient manner under high-pressure situations. Lead by example to maintain a positive and motivated work environment.
Staff Scheduling and Performance Management:?Create and optimize staff schedules to guarantee adequate staffing levels during peak hours, busy nights, and special events.
Implement performance management system, including regular staff feedback, coaching, performance evaluations, and professional development opportunities.
Quality Control:?Recruit, train, and manage staff on the proper techniques for operating a wood-burning pizza oven (not gas-assisted). This includes controlling oven temperatures, understanding the natural convection effect, and maintaining optimal temperature balance to ensure perfect pizza every time. Oversee and provide instruction on the traditional methods of making Neapolitan style pizza from scratch to ensure consistent quality and customer satisfaction.
Ensure and maintain the highest standards of hygiene, cleanliness, and compliance with health and safety regulations.
Financial Oversight: Monitor daily and weekly revenues and expenses, working with upper management to adjust procedures, prices, or offerings as needed to maximize profitability and improve customer satisfaction.
Provide comprehensive reports to the owner, highlighting key performance indicators, operational insights, and recommended strategic improvements.
Inventory Management:?Oversee inventory control, ensuring that all ingredients, particularly those used in Neapolitan-style pizza, are properly stocked and fresh. Track inventory usage and make adjustments as necessary to optimize stock levels, minimize waste, and ensure ingredient freshness.
Qualifications & Experience:
Language of work: English
Education: Completion of a college or other program related to hospitality or food and beverage service management or equivalent work experience.
Experience: A minimum of 3 years of experience working in a high-volume restaurant is required, along with previous management experience.
Experience in inventory management and cost control.
Extensive knowledge of Italian ingredients and traditional Neapolitan pizza preparation methods including pizza production and cooking with a wood-burning pizza oven.
Excellent leadership, communication, and problem-solving skills.
Work Conditions and Physical Capabilities: Ability to work under pressure, with strong attention to detail. The role involves a combination of sitting, standing, and walking.
Ability to Supervise: 5 – 10 employees.
Personal Suitability: Must possess effective interpersonal skills, flexibility, accuracy, teamwork, reliability, organization, and dependability.
Security and safety: Basic security clearance is required.
Responsible beverage certification required
